Often confused with Tessaloniki, because of it’s name. Yet it is the olive of Aix and Baux regions, and it’s name refers to Salon de Provence, where this lovely oil originates.
Sweet hay fruitiness, that’s how I would describe it. I use it profusely on our pumpkin lasagna. And in our fish recipes, like our Gravadlax, of course
